MOLASSES DROP CAKES Natalie H. Johnson 1/2 c. butter or lard 1/2 c. sugar 1/2 c. molasses 2 1/2 c. flour 1 tsp. ginger 1/2 tsp. cassia (cinnamon) 1 tsp. soda 1 egg beaten in last 1/2 c. boining water Cream together butter, sugar and molasses. Mix flour, soda, ginger and cassia together. Add to first mixture and blend with a spoon as much as possible. Add boiling water, and last, add a beaten egg. Drop by spoonfuls on greased cookie sheet. Bake in 350 oven for 10 minutes. Said Natalie: This recipe is so old I only had the ingredients and a few notations added. Therefore, I made up my own directions and they came out very good when I made them. My great grandmother, Annette Leavitt Senter (1842-1916), had this recipe and it would have been used about the time she was married in 1863. However, this could have been handed down from her mother.
